Formerly this almost white to light creamy caviar, because it is so rare, was reserved in principle to the Tsar or the Shah. Therefore, he was also called Tsar or Shah caviar. This caviar is made in the traditional Malossol process.
The caviar from the albino sturgeon is a specialty, this sturgeon roe is often also referred to as tsar caviar, since it was very rare and was therefore reserved for the tsar only. In the past it was lucky if a fisherman caught such a white Acipenser Ruthenus in the net and was able to harvest the white caviar. The albino caviar is a special feature, especially due to its striking coloring.
The grayish soft grains have a diameter of 1.4 to 1.8 mm.
